About us.

We source our beef from South West farms, working closely with our friends at Ruby & White. Grass-fed, rare-breed cattle — including Ruby Red Devon, British White and Longhorn — chosen for flavour, marbling and provenance.

Every cut is selected with care, handled properly and cooked to let the meat shine.

We let the beef do the talking. Each steak is lightly seasoned, cooked over an extremely hot chargrill, brushed with herb-infused butter and rested properly — at least eight minutes — for tenderness and depth of flavour.

No shortcuts. Just care, timing and experience.

Our onion blossom with black garlic mayo has become a Cow & Sow favourite. A whole onion, cut into twelve segments, soaked in infused milk, coated in gluten-free flour and fried until crisp.

With over 20 years of experience in the hospitality industry, Tom’s passion for food and drink has taken him from Brighton to London to Bristol. Having worked with Mark since 2020, Tom has been integral in the development and launch of Cow & Sow restaurants.
